Working with predominantly locally-sourced products, Chef Foshee artfully combines ingredients to create modern dishes that yield not only pure, intensified flavors, but also interesting flavor combinations where each flavor bounces off the others in just the right way. A soy gelatin that delicately melts to blend with a bit of raw hamachi. Slow-roasted beets enhanced by beet-balsamic marshmallows and goat cheese foam. Watermelon cubes dusted with dehydrated black olives and served with cherry tomatoes, diced feta cheese and petite arugula. Each dish tells a story and offers an element of surprise.
