At Jade Theater, opening December 2007 in downtown San Diego near the historic Gaslamp Quarter, executive chef James Montejano has created “Tease Me,” “Taste Me” and “Eat Me” menus that offer a modern take on classic dishes and combine cuisines of several Asian countries. “Tease Me” options include seared Japanese scallop with scallion cake and caviar sauce, while “Taste Me” offers up a lobster trilogy composed of lobster salad, lobster coconut soup and miso-glazed lobster. Heartier “Eat Me” fare includes sugar-spiced salmon with roasted vegetables, udon noodles and wilted greens. Montejano, who was most recently room chef at Black & Blue Steakhouse in Valley View Casino, made a name for himself in San Diego as executive chef at Café Japengo and Pamplemousse Grille.
