Settle into the warm beach sands on a summer evening and feast on The Del’s Southern California Clambake – our take on the East Coast classic. With a sunset backdrop, live entertainment and interactive beach games, guests donned in white attire will cozy up on communal tables and enjoy a shellfish feast featuring a menu by renowned Guest Chef Javier Plascencia.
With over 30 years of cross-border cooking, the charismatic personality of Chef Javier Plascencia, born in Tijuana, Mexico, is reflected in his interpretation of the cuisine of Baja California, a state that he promotes with passion by using ingredients from the fields, farms and the sea of the region. He began his career in the kitchen of his family, who was always hardworking and enterprising. There he learned and experimented with the “rules” of cooking. He later studied culinary art in San Diego, California. Upon graduation , Javier worked in hotels and restaurants in the area before traveling the world, exploring the places he visited and tasting the cuisines of each place. Throughout his career he has launched successful restaurants in the US and Mexico like Misión 19, Finca Altozano, Bracero and Finca La Divina. His most recent project is the 2017 opening of Jazamango in the quaint, surfer town of Todos Santos just north of Cabo San Lucas.
