In a foodie city like San Diego, restaurants come and go like the seasons. But, one local Mexican eatery in La Jolla Shores has continued to thrive.
Acclaimed Chef Trey Foshee's Galaxy Taco opened its doors in 2015 with a simple concept: create truly epic Mexican food using the freshest ingredients, boldly delicious flavors and the craft of Mexican cuisine. To achieve this goal, Foshee put Chef de Cuisine Christine Rivera in charge of the kitchen and their masa program.
"As we learned about the process of Nixtamal and tortilla making for our TBL3 dinners at George's California Modern, Christine, who at the time was one of our cooks, showed a lot of interest," said Foshee. "We learned about the process together by doing a lot of trial and error. In cooking, the simple things are often the most difficult to master and with masa having only three main ingredients and not much resource material we really had to learn about the process by doing it. When Galaxy started to take form she was the obvious choice as the CDC/Masa queen. I knew we had to grind our own masa daily and what a commitment it was to execute in a restaurant. I would proudly put our masa program and our tortillas up against any. "
In their first two years, Galaxy Taco has already earned a spot as one of "San Diego Magazine's "Best New Restaurants" and Rivera, as one of Eater's coveted "Young Gun" Winners. And their future shows no signs of slowing down.
"Our goals at Galaxy Taco are the same as at George's at the Cove: to constantly grow, improve and learn," said Foshee. "Opening a Mexican restaurant is a challenge, especially in a border city that has strong feelings about Mexican food. We continue to travel to Mexico regularly and learn about the incredible food culture from the source. We use it to influence what we do from our menu to our excellent tequila and Mezcal lists and our specialty cocktails. "
